Tis the season for holiday cookies! I’m sure you all have a favorite cookie, maybe even one you only make during the holidays. I have a weakness for all cookies. A lot of desserts I can pass on, but if you put a cookie jar full of warm cookies in front of me they will be gone before they can cool. I like to take cookies that I love all year round re-make them into something special for the holidays. Because snickerdoodle cookies are my absolute favorite I decided to change them up just a little for the holidays, by making snickerdoodle cookie dunkers.
I love to dip cookies in milk. During the cold winter months however I would rather dip my cookies in hot chocolate. If you haven’t tried cookies dipped in hot chocolate you really need to, it takes comfort food to the next level. Because, I am often dipping cookies in something I have started making dunkers. Round cookies hit the rim of the glass or you have to break them to dip them. But long slender cookies….those are perfect for dunking! This is how I came up with dunkers. It only makes sense I would create snickerdoodle cookie dunkers they are my favorite cookie after all.
I took a little help from Betty Crocker cookie mixes, because my life is a hot mess this time of year. Any “extra” time I think I have is spent running kids to and from all the extra activities they have this time of year. So I will take any help I can get in the kitchen right now!
I have used Betty Crocker cookie mixes often they always turn out perfectly and are great for holiday cookies! To make the Snikerdoodle Cookie Dunkers I started with the Betty Crocker Cookie Sugar Cookie Mix. I always grab some Betty Crocker cookie mix when I’m at Walmart.
My local Walmart has a large display of Betty Crocker Mix in the middle aisle beside the grocery section. Or if your life is as busy hot mess like mine is right now you can easily buy the cookie mix online and have it delivered right to your door.
To start you are going to follow the directions on the back of the package. There are two recipes on the package one for drop cookies and one for cutout cookies. I followed the recipe for the cutout cookies.
After mixing the cookie dough it is going to look crumbly, but will stick together easily when handled.
After you make the recipe you are going to roll out the cookies in your hands. Typically when you use the cutout recipe you would roll the cookies out with a rolling pin and flour, then use cookie cutters to make the shapes you want. For this recipe you will use a walnut size amount of dough and roll it in your hands making a log, then roll it in a 1/4 cup of sugar and tablespoon of cinnamon mixed. After you have rolled the dough log in the cinnamon and sugar you will place them on baking sheet and cook in a 425 degree oven for 8 – 10 minutes or until the edges start to brown.
Let them cool slightly and enjoy with your favorite cup of hot chocolate.
Don’t worry snickerdoodle cookie dunkers are easy enough to make that if you eat the entire batch before your family gets home, you can make more and they’ll never even know.
