Pumpkin Pie Chex Mix & Candy Cane Cake Mix Cookies

This time of year there always seems to be someone stopping by to say hello and visit.  It’s nice to have a few easy, quick-to-make, treats on hand.  That way I can bring them out, like I was expecting company. 😉

I found all of my ingredients at my local WinCo.  WinCo is great to place to find all the things you need and their bulk bins are out of this world.

I have two of these recipes to share with you today. First Pumpkin Pie Chex Mix, yes it is as yummy as it sounds.

Pumpkin Pie Chex Mix

This is such an easy recipe! My 16 year old helped me develop the recipe and made it on his own. This is a perfect pre-holiday-dinner snack, sweet/salty, light and so yummy it’s a bit addictive.  My kids love it so much.

Rice Chex Pumpkin Pie Mix

Next is Chocolate Candy Cane Cake Mix Cookies.  Cake mix cookies are my favorite type of cookies to make! They are so easy, and you can customize them into whatever type of cookie you want. Betty Crocker cake mixes are my favorite to use for cake mix cookie. I find cake mix cookies to be a bit sticky, however when I use Betty Crocker cake mixes they are not sticky.

It only takes a few ingredients and minute to make cake mix cookies.

Pumpkin Pie Chex Mix

Serves: 9 cups
  • 1 box Rice Chex cereal
  • 1 package crushed graham crackers
  • ½ cup pumpkin puree
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon ground clove
  • 1 - ½ cup melted butter {or one stick}
  • 3 Tablespoons brown sugar
  1. Mix all ingredients except for the Rice Chex cereal and the crushed graham crackers. Stir well and pour over the cereal and graham crackers. Stir well, trying not to break the cereal. Pour 1-2 cups of powdered sugar over the mixture and stir gently.

Candy Cane Cake Mix Cookies

Serves: 2 dozen
  • 2 Eggs
  • ½ cup oil
  • 1 Box Betty Crocker German Chocolate
  • Crushed Peppermint Candy Canes
  1. Add eggs and oil to a large bowl, stir until mixed well. Pour in cake mix and stir well. Form into tablespoon size balls and dip the top in crushed candy canes. Flaten out balls of dough after placing them on a cookie sheet. Bake for 10-15 minuts in a 350 degree oven.
