My sister, if you have read this blog for very long know, is awe-mazeing!! She passed on a recipe for home made granola that is outstanding. I have made a few tweaks to it but over all it is the recipe she gave me.
So what are we doing today? Making Jeni’s Yummy granola (or gorilla if you are a 4year old that lives in this double wide)!
We are starting with an entire container of quick oats. It makes a lot! Pour it all into a huge bowl.
Next you need to choose your nuts. You can use what ever you like. I always use almonds and what ever else I have on hand, or happens to be cheep at the store. I like to keep mine chunky. So a rough chop is fine.
The Flax seed and Wheat Germ are optional. They do add a more nutty flavor and extra nutrition. But it is still delish without it!
Dump the nuts, coconut, flax seed, wheat germ, salt, and brown sugar in the bowl with the oats. Stir well.
Mix together oil, maple sugar and cinnamon in a small bowl.
Pour over dry ingredients and mix. Making sure everything is coated.
Spread it out on to two cookie sheets or jelly roll pans. Making an even layer.
Put it in the oven and let it cook. Remembering to stir every 20 min or so. Let it cool in the pan.
I like to store mine in Ziploc bags in the deep freeze. These are quart size bags. Yield is 3 quarts and a sandwich bag. Our is usually gone in about a month but it would easily last in the deep freeze for a few months.
We eat ours with milk like cereal or mixed in yogurt (this is the kiddos fave way). Or with cantaloupe strait out of the garden.

Jeni’s Yummy Granola
Pre-heat your oven to 250.
Pre-heat your oven to 250.
Mix dry ingredients in a large bowl.1Large (42oz) container rolled oats (you can use old fashioned or quick oats)
2-3 cups your choice chopped nuts
1 tsp. salt (if you get salted nuts decrease this to 1/2 tsp.)
3/4 cup brown sugar
1 cup sweetened coconut
1/4-1/2 cup ground flax seed(optional)
1/4-1/2 cup wheat germ(optional)
Mix together in a small bowl:
3/4 cup veg. oil
1 cup maple syrup (decrease to 3/4 cup if not adding flax seed or wheat germ)
1 tsp. cinnamon (optional)
Mix well with dry ingredients.
Spread on two jelly roll pans and bake at 250 for a total of two hours. Take out and mix after the 30 min. and then every 20min. after that so it will brown evenly and not burn. Granola is done when browned and crispy. Oven temps may vary so cooking times will vary as well.
Add ins and changes:
You can omit most of the dry ingredients if you don’t like coconut don’t put it in, if your family loves nuts put more in. It really is up to you. I would caution you that if you put raisins or dried cranberries in you add them after you cook the granola. I have cooked them before and it is not pretty or yummy!Thanks for hangin’ out.
