Tex-Mex Roasted Sweet Corn Fish Tacos #fishnveggies

I love fish, and feel very lucky that most of my kids love fish as much as I do.  It made me so happy when I announced to my kids that I was going to try to make fish tacos for dinner, they all cheered.  Well, little Lotte didn't know what we were talking about so she didn't, but the rest of the kids did.

I  used Van de Kamp's frozen fish fillets to make our fish tacos.

 I put the fish fillets on a pan to bake for 20 minuets while I got the rest of the meal ready. It worked out perfectly, everything was done at about the same time.  Using frozen fish made dinner less stressful on me, and therefore, happier for everyone.

After I got my fish in the oven, I got to work on my Tex-Mex Roasted Sweet Corn.  This is really easy to make by using Birds Eye frozen corn.

Recipe:

Tex-Mex Roasted Sweet Corn Fish Tacos

Ingredients:

• Birds Eye frozen sweet corn
• Cooked Van de Kamp's frozen fish fillets or fish tenders
• 1 lime
• 1 large garlic clove chopped
• 1/2 teaspoon salt
• 1/4 teaspoon fresh cracked black pepper
• Olive Oil
• 1/4-1/2 teaspoon cumin (depending on taste)
• warmed tortilla shells

Pre-heat oven to 425 (this is the same temp the fish cooks at so you can cook the corn and fish together).   Spray or drizzle olive oil on a foil lined cookie sheet.  Spread a single layer of frozen sweet corn on the prepared cookie sheet.  Squeeze lime over corn , sprinkle salt, pepper, chopped garlic, and cumin all over corn.  Stir corn to coat well.  Cook for 20 minutes.  

When the fish is golden brown (about 20 minutes follow the directions on the box for baking time) take it out of the oven and raise temp to 500 degrees.  Continue to cook corn for 10 minutes or until the kernels just start to turn brown.

After fish and corn are cooked add veggies and fish to a tortilla shell, eat and enjoy.

Add in your choice of extra veggies.  We chopped up red onions, sweet red peppers, and tomatoes to add in.  I also had cilantro and extra lime wedges. 

They were a huge hit.  In fact we had the left overs for dinner last night too.  Every one said that they are a "do again meal".

 I love how tacos are so kid friendly, they can put what they want on them so everyone is happy. The fish was crispy on the outside, and with all the veggies it makes for a healthy meal the kids enjoy as much as I do.
